#1 Sugar Free Chocolate Chip Cookies

First up, it is one of the best sugar free desserts ever! They look good and taste great, and do not have any coconut flavor! These cookies are excellent for someone who is sensitive to gluten, trying to eat less sugar, or for someone who is trying to eat healthier, Enjoy!

Sugar Free Chocolate Chip Cookies V2

Ingredients:

  • ¾ C Butter.
  • ½ C natural sweetener of your choice.
  • 1 tsp Vanilla.
  • 1 egg.
  • ⅔ C coconut flour.
  • ¼ tsp salt.
  • ½ tsp Baking soda.
  • ¼ C carob chips (Or sugar free chocolate chips).
  • 1 ¼ tsp Xanthan gum.
  • 2 tbs warm water.

Instructions:

  1. Preheat oven to 375°.
  2. In medium size bowl, combine coconut flour, Xanthan gum, baking soda, and salt, set aside.
  3. In a large bowl with a mixer, cream butter and (natural sweetener) together until fluffy, add vanilla and egg, mix well.
  4. Add dry ingredients and water to batter mix well.
  5. Mix in the carob or chocolate chips.
  6. Scoop a small ball of dough on a greased cookie sheet then, using a large spoon press on each cookie so they are slightly flat, bake for 8-10 minutes or until slightly brown and Enjoy!

Sugar Free Chocolate Chip coconut Cookies (Flour-less)

Ingredients:

  • ¼ C oil (sunflower).
  • 2 eggs.
  • ⅛ tsp salt.
  • ½ C cocoa powder (unsweetened).
  • 1 C shredded coconut (unsweetened).
  • 2 tsp pure vanilla extract.
  • ⅓ C carob chips or (sugar free chocolate chips).
  • ½ C Swerve sweetener.
  • ½ tsp Stevia (liquid vanilla).

Instructions:

  1. Preheat your oven to 375°.
  2. In a small mixing bowl, whisk together the eggs, sunflower oil, vanilla extract and liquid stevia (Set aside). Also, whisk together the cocoa, salt and Swerve sweetener in another small bowl.
  3. Pour wet ingredients into dry ingredients and mix until combined. Then add in the shredded coconut and chocolate chips (once well combined).
  4. Use a dough scoop and make 12 mounds of dough and place mounds of dough on a greased cookie sheet or a parchment lined baking sheet.
  5. Bake for 10 to 12 minutes and Enjoy!

Sugar Free Chocolate Chip Pumpkin Cookies

Ingredients:

  • ½ C pumpkin (puree).
  • 1 ¼ C ground sunflower seeds (unsalted).
  • ¼ C ground flax-seed.
  • ½ tsp pure vanilla extract.
  • ½ tsp nutmeg.
  • ¼ tsp cloves.
  • ½ tsp ginger.
  • 1 ½ tsp cinnamon.
  • 2 tbsp coconut flour.
  • 1 tsp baking powder.
  • ½ tsp salt.
  • ½ tsp Stevia (liquid vanilla).
  • ¾ C Swerve or (another natural sweetener).
  • ½ C sugar-free chocolate chips (carob chips).

Instructions:

  1. Preheat oven to 175 degrees C (350F).
  2. Using a stand mixer or KitchenAid, add the egg, pumpkin, butter, Swerve, vanilla extract and liquid Stevia until smooth.
  3. Whisk the cloves, ginger, cinnamon, coconut flour, baking powder, seed (flax and sunflower) flour and salt
  4. Pour dry ingredients into wet and mix until smooth, then add the chocolate chips or (carob chips) and stir on low.
  5. Use a dough scoop to make 24 cookie balls.
  6. Place on a greased baking sheet or lined with (Silpat baking, parchment baking).
  7. Bake at 175 C for 20 to 22 minutes.
  8. Cool for 5 minutes on cookie sheet, then transfer to a wire-rack to cool completely and Enjoy!

Sugar Free Chocolate Chip Cashew Cookies

Ingredients:

  • 2 egg (size-6).
  • 1 tbsp pure vanilla extract or (vanilla paste).
  • 2 tbsp Stevia powder or (Erythritol or Xylitol).
  • ¼ C sugar-free chocolate chips.
  • ¾ C cashew nuts or (cashews pieces).
  • ¼ C virgin coconut oil (melted).
  • 2 C coconut (desiccated).
  • 2 tbsp coconut flour.

Instructions:

  1. Preheat oven to 160 degrees C.
  2. Prepare a baking tray by lining it with parchment paper (Set aside).
  3. Place all the ingredients in a food processor or(blender) except the chocolate chips, process until dough forms ball.
  4. Remove from the bowl, shape dough into 8 balls.
  5. Place the dough balls on the prepared baking tray.
  6. Flatten the dough slightly with your hand palm until looks smooth.
  7. Bake 13 to 15 minutes at 160 degrees C or (until slightly golden). Do not over–bake or the cookie dough will be too hard.
  8. Immediately remove from oven and transfer to cooling racks (cool down for one hour) and Enjoy anytime!

These S.F chickpea chocolate cookies are made with chickpea flour, peanut butter, and sugar free chocolate chips for a tasty, guilt-free cookie.

Ingredients:

  • ½ c peanut butter (Natural Style).
  • ¼ c milk (Dairy-free).
  • 1 tsp baking powder.
  • 1 tbsp pure vanilla.
  • 15-oz can chickpeas (rinsed, drained & patted dry).
  • 50-g sugar free chocolate chips.
  • Dash sea salt.

Instructions:

  1. Preheat oven to 400°.
  2. Process the chickpeas through the sea salt until you get a smooth paste.
  3. Then mix in the chopped chocolate (including sugar-free chocolate chips or carobs).
  4. Bake in the oven for 12 to 15 minutes or (until lightly browned on top).
  5. Cool on a wire-rack and enjoy!

Ingredients:

  • ½ C unsalted butter (softened).
  • 1 ½ C ground sunflower seed flour.
  • ½ C ground flax-seed.
  • ¼ tsp pure vanilla extract.
  • 2 eggs.
  • 1 tsp salt.
  • 1 C sugar free chocolate chips (Or carob chips).
  • ¼ tsp Stevia (vanilla liquid).
  • 1 cup (Swerve sweetener).

Instructions:

  1. Preheat oven to 375° F.
  2. In mixing bowl, combine together the eggs, butter and swerve until well blended.
  3. Add the rest of the ingredients (except chocolate-chips) and stir until fully combined.
  4. Add the chocolate chip and gently stir until combined.
  5. Using a tablespoon scoop, scoop the cookie dough into little balls. Place the balls on a cookie sheet (or use parchment).
  6. Bake in the oven for 13 to 15 minutes until crisp around the edges and Enjoy!
