#1 Sugar Free Sunflower Bread

Sugar Free Sunflower Bread

Ingredients:

  • 2 C + 2 tbsp sunflower seeds.
  • ½ C ground flaxseed.
  • ½ C sunbutter (unsweetened).
  • ½ tsp ground cinnamon.
  • 2 tsp baking powder.
  • 1 tsp pure vanilla extract.
  • ½ tsp salt.
  • 4 eggs.

Instructions:

  1. Preheat the oven to 300°.
  2. (The flaxseed mixture): In a bowl whisk together the flaxseed, salt and baking powder (set aside).
  3. Place two cups sunflower seeds in a food processor and pulse until resembles flour (Note: save two tablespoons unground for topping).
  4. Add sunbutter into a stand mixer bowl and beat, then add 1 egg at a time until well incorporated. Slowly, pour the mixture (flaxseed) into the standing mixer.
  5. Then add the sunflowers (ground), cinnamon and vanilla extract, whisk until smooth.
  6. Line a 9×5-inch loaf pan with (brown paper) or parchment paper and grease loaf pan or spray with non-stick cooking spray.
  7. Pour the mixture into loaf pan. Then sprinkle with remaining 2 tbsp. (sunflower seeds).
  8. Bake at 300 degrees for 40 minutes, and allow to cool.
  9. Remove onto a cutting board, then cut the bread loaf into 12 slices!

Note: generally stay good for 1 week in the refrigerator (for freshness keep it frozen) and Enjoy!

Sugar Free Cranberry Apple Breads

Ingredients:

  • 2 C cranberries (fresh).
  • 4 C apples (chopped + peeled).
  • 1 tbsp lemon juice.
  • 2 C applesauce (unsweetened).
  • ⅓ C apple cider (no sugar added).
  • ½ C butter (softened).
  • 3 C whole wheat pastry flour.
  • 3 eggs.
  • 2 tsp cinnamon.
  • 2 tsp pure vanilla extract.
  • ½ tsp nutmeg.
  • ½ tsp baking soda.
  • 1 ½ tsp salt.
  • 1 tbsp powdered Stevia and 2 tbsp powdered Stevia.
  • (Optional): ½ C walnuts.

Instructions:

  1. Pre-heat oven to 350 degrees F.
  2. Grease 12 mini loaf pan with non-stick cooking spray.
  3. In a Mixing bowl, mix together the cranberries, apples, lemon juice and 1 tbsp stevia powder (set aside).
  4. In a another large bowl mix together the eggs, applesauce, butter, vanilla extract and apple cider. Stir in baking soda, salt, nutmeg, cinnamon and 2 tbsp stevia powder. Beat until the mixture well incorporated, add the flour and nuts (optional).
  5. Pour mixture into bread loaf pan and bake for one hour, or until a wooden toothpick, inserted in center just comes out clean.
  6. Allow to cool and Enjoy!

 

#3 Sugar Free Irish Soda Bread

Sugar Free Irish Soda Bread

Ingredients:

  • 2 tbsp coconut flour.
  • 2 C sunflower seeds.
  • ¼ C buttermilk.
  • 2 tbsp cold butter (unsalted).
  • ½ C ground flaxseed.
  • 2 tsp baking powder.
  • 2 eggs.
  • ½ tsp salt.
  • 2 tbsp Stevia (powdered) Or ¼ C Swerve Sweetener.
  • ¼ C currants (Note: for people with diabetes, don’t add currants).

Instructions:

  1. Preheat oven to 350° F.
  2. In a food processor (or a blender) grind the sunflower seeds until fine.
  3. Add the coconut flour, ground flax-seed, swerve sweetener (or stevia powder), soda (or baking powder) and salt, then pulse in the butter.
  4. Add the remaining ingredients: the eggs, buttermilk (except currants) and pulse the food processor just until combined.
  5. Remove the dough and transfer to a clean bowl.
  6. (Optional): Mix in currants (Note: for people with diabetes, don’t add currants).
  7. With wet hands, form shape of dough and place in a greased cast iron skillet.
  8. Score an X (or a hash mark) in the middle and bake for 30 minutes (350°). Then reduce the temperature by 25°F (=325°) and bake for 5 to 10 minutes or until golden.
  9. Set aside to cool before slicing and Enjoy!

Sugar Free Cheesy Cornbread

Ingredients:

  • 1 C coconut flour.
  • 1 C Silk-Coconut milk (unsweetened).
  • ½ C nonfat cheddar cheese (shredded).
  • ½ C butter-soft (unsalted).
  • 4 eggs.
  • 1 tsp baking soda.
  • ½ tsp salt.
  • ⅛ tsp Stevia extract (organic).

Instructions:

  1. Preheat-oven to 350° F.
  2. Grease an 8 X 8-inch baking dish or pan.
  3. Whisk on low speed eggs, milk and butter in a stand mixer.
  4. In another bowl blend the coconut flour, baking soda, salt and stevia extract together.
  5. Pour this mixture into the stand mixer on low speed.
  6. Now, add the cheddar cheese and stir until combine well.
  7. Pour the mixture into baking dish or pan and bake for 40 to 45 minutes.
  8. Remove, cool slightly before serving and Enjoy!

 

#5 Sugar Free Pumpkin Banana Bread

Sugar Free Pumpkin Banana Bread

Ingredients:

  • 1 C pumpkin puree.
  • 2 ½ tsp pumpkin (pie spice).
  • 1 tbsp ground flaxseed.
  • ½ tsp xanthan gum.
  • 2 C gluten-free flour (Bob’s Red Mill).
  • 1 tsp cinnamon.
  • 2 bananas (mashed).
  • ½ C applesauce (unsweetened).
  • 2 eggs (beaten).
  • ½ C milk 1%.
  • 1 tsp baking powder.
  • 1 tsp baking soda.
  • ½ tsp salt.
  • 1 tsp pure vanilla extract.
  • 1 tsp Stevia (vanilla liquid).

Instructions:

  1. Preheat the oven (350° F).
  2. Place the eggs, milk, vanilla extract, apple-sauce, vanilla liquid stevia and 2 banana mashed in a stand mixer, then blend on speed-four until well-combined.
  3. Stir together gluten-free flour, flax-seed, baking (soda and powder), salt, cinnamon, xanthan gum and pumpkin pie spice in a another bowl.
  4. Pour the dry into the wet ingredients, blend (making sure it’s all incorporated), then blend in pumpkin puree.
  5. Spray a bread loaf pan with non-stick cooking spray, then pour mixture into loaf pan.
  6. Place in the oven and bake for 1h to 1h10 minutes or until until a toothpick in center of bread loaf comes out clean.
  7. Allow to cool for 25 to 50 minutes before removing from bread loaf pan and Enjoy!

 

#6 Sugar Free Blueberry Banana Bread

Sugar Free Blueberry Banana Bread

Ingredients:

  • 1 ¼ C blueberries (fresh).
  • 3 bananas (mashed).
  • 1 tbsp ground flaxseed.
  • ½ C applesauce (unsweetened).
  • ½ C milk 1%.
  • ½ C buckwheat flour.
  • 1 ½ C flour (gluten free).
  • 1 tsp cinnamon.
  • 1 tsp balking soda.
  • 1 tsp baking powder.
  • ½ tsp salt.
  • 1 tsp pure vanilla extract.
  • 2 eggs (beaten).
  • 1 tsp Stevia (berry liquid).

Instructions:

  1. Pre-heat your oven to 350°F.
  2. In a mixer bowl of a stand mixer, mix the eggs, applesauce, milk, vanilla extract and berry liquid stevia, and mix on-speed-4 until combined. Now, add 3 bananas and blend on-medium-high for one minute.
  3. In another bowl, add together the gluten-free flour, flax seed, baking soda, baking powder, salt and stir until combined.
  4. In a separate bowl, Combine wet ingredients and dry together and mix until fully combined, by hand stir in the blueberries.
  5. Spray loaf pan with non-stick cooking spray (or parchment paper) and pour mixture into the bread loaf pan.
  6. Bake for 60 to 70 mins, or until a toothpick in center of bread loaf comes out clean.
  7. Remove from oven and let cool for 45 mins, before removing from loaf pan and Enjoy!
